Ingredients Needed

2 POUNDS (1kg) RUSSSET POTATOES, SCRUBBED, PEELED, AND CUT INTIO 1-INCH (2.5 cm) CUBES
2 TABLESPOONS (28 g) UNSALTED BUTTER, CUT INTO PIECES
½ CUP MILK (120 ml) MILK, WARMED
3 OZ. (60 g) CRUMBLED BLUE CHEESE (ABOUT ¾ CUP)
1 TEASPOONS CHOPPED FRESH THYME OR 1 TABLESPOON CHOPPED PARSLEY
SALT
A GENEROUS SPRINKLE OF THE PERFECT PEPPER

Cooking Instructions

  • PLACE POTATOES IN A LARGE SAUCEPAN OF SALTED WATER AND BRING TO A BOIL OVER HIGH HEAT. REDUCE HEAT AND SIMMER FOR 15-20 MINUTES, OR UNTIL POTATOES FEEL TENDER WHEN PIERCED WITH A KNOFE.
  • DRAIN IN A COLANDER AND RETURN PAN SET OVER LOW HEAT
  • MASH POTATOES WITH A POTATOE MASHER OR RICER AND STIR IN BUTTER UNTIL MELTED. GRADUALLY STIR IN MILK AND CHEESE UNTIL COMBINED. STIR IN THYME AND SEASON WITH SALT AND PEPPER TO TASTE. SERVE WARM.
