GRILLED PERFECT PORK CHOPS WITH MANGO SALSA

Ingredients Needed

1 TABLESPOON (14ml) VEGETABLE OIL
2 TEASPOONS PACKED BROWN SUGAR
1 TEASPOON THE PERFECT SPICE LOW-SODIUM
½ TEASPOON DRIED RED PEPPER FLAKES
½ TEASPOON ONION POWDER
½ TEASPOON GARLIC POWDER
½ TEASPOON SALT
¼ TEASPOON GROUND CINNAMON
¼ TEASPOON GROUND GINGER
¼ TEASPOON DRIED THYME
¼ TEASPOON GROUND BLACK PEPPER
4 PORK CHOPS (1/2 inch OR 1.3 cm THICK)

MANGO SALSA
1 MANGO, PEELED, PITTED AND DICED SMALL
2 TABLESPOONS (20 g) MINCED RED ONION
1 SERRANO OR JALEPENO PEPPER, SEEDED AND MINCED
3 TABLESPOONS (40 ml) FRESH LIME JUICE
1 TEASPOON MINCED LIME ZEST
2 TABLESPOONS (8 g) MINCED FRESH CILANTRO (OPTIONAL)

Cooking Instructions

  • COMBINE OIL, BROWN SUGAR,THE PERFECT SPICE LOW-SODIUM, RED PEPPER FLAKES, ONION POWDER, GARLIC POWDER, SALT, CINNAMON, GINGER, THYME,, AND RED PEPPER IN A SMALL BOWL
  • COAT BOTH SIDES OF EACH PORK CHOP WITH THE SPICE RUB, USING OYUR FINGERS TO RUB THE SPICES INTO THE MEAT. REFRIGERATE, COVERED, FOR AT LEAST 30 MINUTES OR UP TO 4 HOURS.
TO PREPARE THE SALSA
  • COMBINE MANGO, RED ONION, SERRANO PEPPER, LIME JUICE, ZEST, AND CILANTRO IN A SMALL BOWL. SEASON WITH SALT TO TASTE (OR THE PERFECT SPICE LOW –SODIUM)
TO COOK PORK CHOPS
  • PREPARE GRILL TO MEDIUM-HIGH HAET. GRILL PORK CHOPS ON AN OILED RACK 6 TO 8 MINUTES PER SIDE, OR UNTIL AN INSERTED INSTANT READ THERMOTER READS 165 DEGREES F. (75 DEGREES C)
  • SERVE WARM TOPPED WITH THE MANGO SALSA
