The Perfect Fall of the Bone Ribs

Three slabs of ribs from Stephen's Butcher Shop in Port Carling – feeds 6 – 8
Perfect Spice Original
Cayenne (if you dare)
Start with equal parts (1 Tbls) of each dry ingredient. Mix and taste. Continue to add ingredients and taste until you get the flavour you like. Some like it sweet, some like it more garlicky etc.
Take ribs out of refrigerator one hour before cooking. Remove sliver membrane on bone side of ribs if there is one. Sprinkle dry rub on one side of ribs. Let sit 30 minutes. Flip over and sprinkle other side of ribs and let sit another 30 minutes.
1) Preheat oven to 300.
2) Place ribs on a foil lined sheet pan. Place in oven for one hour. Turn ribs over and bake one more hour. Pick up the ribs in the middle and if they droop easily, they are done.
3) Take out of oven and coat with your favourite BBQ sauce. Turn oven off and place ribs in oven until ready to serve. Cover with foil if necessary. Do not leave in the oven for more than fifteen minutes.
