Perfect Breaded fish recipe that even kids will love.
12 oz of sole, cod or perch
1/4 cup lemon juice
1/2 tsp salt
1/8 tsp pepper
1/2 tsp The Perfect Spice Blackening Rub
1 clove garlic, minced
1/4 tsp oregano
6 Melba toast, crushed and made into crumbs
Parsley and lemon slices
1) Combine lemon juice, salt, pepper, garlic, oregano, and The Perfect Spice.
2) Pour over fish and marinate at least 1/2 hour.
3) Drain fish and coat with crumbs and sauté in iron skillet sprayed with PAM.
4) Garnish with parsley and lemon slices.
Makes 3 servings
