3 1/2 lbs Russet Potatoes (peeled and thinly sliced) 

3 cups whole milk

1 teaspoon butter

1 small onion (finely diced)

2 teaspoons THE PERFECT SPICE LOW SODIUM (www.perfectspice.com)

8 ounces shredded cheddar cheese



 Preheat oven to 400F degrees. Lightly grease a 2-quart baking dish and set aside

 In a large saucepan, heat the milk, butter, and THE PERFECT SPICE LOW SODIUM to simmer over medium-high heat taking care not to scald.

 Add potatoes and onion, cover, and simmer for 10 minutes. Remove from heat.

Layer baking dish with 1/3 of the potato/milk mix then add 1/3 of the shredded cheese. Alternate the layers ending with cheese on top.

Cover and bake for 30 minutes or until browned and bubbly.

Allow to rest for 5 minutes. Enjoy!
