2 large Yukon Gold Potatoes

2 medium onions (thinly sliced)

10 Cherry Tomatoes

1 cup Old Cheddar Cheese (cubed)

5 eggs

1 cup cream (35%)

1 ½ cups milk

2 tsp olive oil

Perfect Spice



Preheat oven to 450F

Thinly slice potatoes, on a baking sheet, place into oven for 10-12 mins to soften

Line a 9" pie plate with potatoes to form crust

Half the tomatoes and roast in oven, cut side up. Drizzle with olive oil and a generous sprinkle of Perfect Spice

Fry the onions with the remaining olive oil

Reduce oven temp to 350F

Place old cheddar cheese and sliced onions on the potato crust

In mixing bowl whisk together the eggs, milk, cream and a generous sprinkle of Perfect Spice

Pour over crust and add cherry tomatoes

Place in oven for 45-55 mins

Remove when it is set and the edges of the crust are browned
