1 leek (light green parts preferred)

2 cups broccoli or cauliflower florets

½ cup diced zucchini

½ cup diced red pepper

½ cup diced fresh tomatoes

8 large eggs

¾ cup shredded cheddar cheese

½ cup diced ham

2tsp grainy mustard

Pre heat oven to 350F

Heat 10" skillet or oven ready non-stick pan on medium-high heat. Add oil and coat pan

Add leek, broccoli, zucchini, tomatoes and red pepper, cover and cook 6 mins or until broccoli is tender but crisp

Meanwhile in large bowl, whisk eggs, cheese, ham, mustard and generous sprinkle of Perfect Spice and Perfect Pepper together. Distribute evenly across bottom of pan, cover with egg mixture and cook for 1 min or until edges are slightly set

Place in oven and cook for 25 mins until eggs are puffy

Serve cut into wedges
