GNOCCHI with FRESH PEAS and ASPARAGUS

 

Ingredients:

3 strips of bacon

1lb asparagus (trimmed and cut into pieces)

½ cup chopped shallots or green onions

3 cloves garlic (minced)

Perfect Spice

Perfect Pepper

1lb potato gnocchi (fresh or frozen)

½ cup fresh peas

3tbsp Parmesan cheeses (grated)

 

Directions:

In large skillet cook bacon until crisp (turning at least once). Remove bacon to paper towel on plate. Drain grease, reserving 1tbsp. Wash skillet.

Into skillet add reserved bacon fat, asparagus, green onion, garlic and a generous sprinkle of Perfect Spice and Perfect Pepper. Cook for about 7 mins until asparagus is crisp tender (stir often)

Meanwhile in a large pot of boiling water (lightly salted) cook gnocchi as per package instructions

Add peas for the last 2 mins

Drain and reserve ½ cup of cooking water

Crumble bacon and add ½ to skillet with reserved cooking water, gnocchi mixture, 2tbsp of parmesan cheese. Toss to coat

Place in serving dish and top with remaining bacon and cheese
